Winter Time Squash Soup

Winter is here! It is ROOT vegetable season. With the abundance of root vegetables. Here is a lovely squash soup. Perfect for a chilly day.

INGREDIENTS 1 yellow onion diced 3 cloves garlic minced
1 squash cut into small cubes 2 1/2 cups vegetable broth (chicken broth) 1 cup oat milk (pick your milk) 1 tbsp. fresh thyme 1/2 tsp paprika 1/2 tsp sea salt 1/2 tsp white pepper
INSTRUCTIONS Crockpot Cooking - Oh How I love to cook in my crock pot!
Place onion, garlic, squash, broth, and seasoning in the crock pot.
Cook on high for 1 hour.
Add oat milk cook for 20 minutes.
Set aside 1-2 cups of soup if you want to keep some chunks.
Use an immersion blender to blend the remaining soup until smooth.
Option #1 For a chucking style soup , add in the rest of the soup that was set aside.
Option #2 Prefer a smoother textured soup, blend all the soup together.
Serve immediately and top oat milk, sprinkle of paprika and white pepper.
To make the pretty design on top, take a toothpick and swirl. There is no right or wrong way to swirl, just have fun.
This is a perfect soup to freeze. Make ahead and pop in the freezer (once the soup cools) and enjoy later in the year. Picture yourself coming in from playing in the snow and wanting to warm up with a yummy bowl of soup.
Plan ahead. Take the soup out the night before and it will be ready to enjoy the next day after you and your family enjoy some fun time in the snow.
Consider serving for this wonderful winter soup after a day playing in the snow.
